Have you ever heard about Aspic?
Aspic used to be hugely popular in the U.S. it’s served cold and completely savory, not like a dessert hello. It is actually a jellos mold filled with meat, eggs and veggies.
The dish is made with flavours like pork, tomato.and shrimp. Its called Aspic and can be molded into different shapes. Aspic is clear and made from liquid stock simmered with bones. Once refrigerated, it forms a natural gelatin. But sometimes powdered gelatin is also used to make it stiffer.
The dish was featured in tons of cookbooks too. It was served at fancy meals in the 15th century. French Chef Marie Antoine Careme perfected the process. It was called Chaud-Froid or hot and cold because the dish was cooked and then cooled. It was also a way to stretch ingredients which is a reason why Aspic became super popular during the 60s and 70s in America.

The dish wasn’t created, just for looks. Food won’t spoiled if it was encased in Aspic.
